The Five-Spice Crispy Chicken

The crispy five-spice chicken is a comforting dish made with chicken and tamarind sauce mixed with five spices. It is a dish that results from the combination of Asian and European gastronomy. Perfectly cooked, it is served with tamarind sauce, loved not only by children but also by their parents. Now, let's take a look at the recipe below:
Ingredients: Crispy Chicken
- 5 boneless chicken thighs
- 5g of five-spice powder (ngu vi huong)
- 1 tablespoon (tbsp) of fish sauce (nuoc mam)
- 50g of cornstarch or tapioca starch
- 1 clove of garlic, minced
- 1 onion, minced
- 2 stalks of lemongrass
- Salt, pepper
- Frying oil
Tamarind Sauce
- 2 tbsp tamarind paste
- 2 tbsp sugar
- 3 tbsp fish sauce (nuoc mam)
- 1 teaspoon garlic
- 1 tbsp chopped cilantro
- 1 tbsp chili powder
- ½ tbsp ginger
- 1 tbsp thính (toasted rice, corn, sesame, and mung bean powder)
- ½ onion, minced
- 30ml warm water
Preparation:
Chicken:
- Prepare the marinade by mixing all the ingredients together. Stir well and let the mixture rest for at least 30 minutes.
- Coat each piece of chicken in cornstarch or tapioca starch in a bowl.
- Fry the chicken pieces in a pan over medium heat for 5-7 minutes. Once done, remove them and place them on a rack.
- For the second frying, increase the heat of the pan and add more oil. Once the oil is hot, fry the chicken pieces again for 10-20 seconds. Remove and place them back on the rack.
Sauce
- In a bowl, soak the tamarind paste in 30ml of warm water. After 10 minutes of soaking, strain the sour water and discard the tamarind seeds.
- Add the other spices and mix well.
